Go to Playstation.com or Sony.com and find your region, then locate manual PS3 firmware update. When you have the update, place it inside a USB and insert it into the PS3. You can't start a PS3 on a new hard drive without formatting (which it asks in the first place), then updating with a brand new firmware from a USB. Before you upgrade, just plug in your hard drive via USB, select System Settings>Backup Utility>Back Up and follow the onscreen directions. You need to "open" the clip in the connector with your nails then the cable is loose and you can remove it. And to reconect it is made in the other way you prepare the connector clip in the "open" position, insert the cable in it, and "close" the clip. By doing it like that they will not suffer any damage.

No, the game will still be on the disc. You're only copying the files, not transfering them. PS3 game discs are permanently set to read-only, just like most other commercially sold CDs, DVDs and BluRays. Meaning the only way to actually remove data from the disc is to physically damage it and make it unreadable.

The Backup Utility on the PS3 is located in this area; XMB > Settings > System Settings > Backup Utility.
